A cold, rainy day today kept me inside. I still have some lingering cold/flu symptoms which make me reluctant to go out in the cold.
I had some old bananas in need of using so I made some banana bread, yum!
Banana Bread
I substituted virgin coconut oil for the butter, added one more egg, and
added about 1/4 cup of unsweetened dried coconut (it is grated rather than shredded here, which makes for a very nice finished product texture).
I baked it in a rectangular glass cake dish instead of a loaf pan
and took it out to test with a toothpick as soon as the top began to brown. It came out beautiful, light in color, fluffy and cakelike.
