Made up some black bean chili from scratch today, enough to freeze for the week's meals. Perfect fall weather food!
The beans are simmering and I am caramelizing the onions while seeding and chopping the peppers and tomatoes.
Onions caramelized, adding the tomatoes and peppers to cook them down so the beans will fit in the pot.
The spices: paprika, cumin, cayenne, oregano, garlic and crushed red pepper.
Beans finally soft, I fried up the ground beef with a little salt and combined everything together, cooked a bit longer and here is my chili!
PS. Later on I made some cornbread to go with it; can't remember the last time I had it, yummmmmmmmmmm!!!
